Theo, first, welcome aboard! Personally I would not worry about trying to make the meat wet before resealing – in fact that would not even be advisable! Rather than to cut the bag open with a large cut what I would do is instead make a tiny cut on a corner of the bag. Then massage the air pockets out as best you can before inserting a straw or tubing and suck out the remaining air and quickly seal that corner cut using a bread twisty or tape. You do not need a perfect vacuum with a UMAi Dry bag. Ron
