I put it in the regular refrigerator. I did have it on a small plate. Would I need to vacuum seal it again, or can I just let it dry in refrigerator.
It dried 7 weeks and is now 1.3/4 lbs.
Having it placed on a small plate is not a good thing. The Charcuterie or Dry Aging Meat should be placed on a wire rack to allow moisture to be evaporated from all sides. By placing it on a plate you thereby blocked evaporation from a significant portion of the meat.
You can probably leave it in the same bag and put on a wire rack to continue to dry.
