You may want to rethink that.
Mold growing on traditional salamis is growing on the outside of the natural or synthetic casing and is easily removed by peeling off the casing. Yours is growing directly on the minced meat, underneath the Umai casing. More than likely too high of a humidity for the Umai method of dry curing as Jim pointed out. It will more than likely cause problems, making for slimey outcome.
Nothing wrong with mold in traditional Charcuterie , but not so great with the Umai method.
