Hi Bob, Welocme to the forum.
By putting it into Foodsaver bags you probably did the right thing. Most likely the outside dried a bit too much and the inside not enough. The vacuum bag can help equalize the moisture inside and in a week or two you may find it will look a bit different. You can also take the meat out of Foodsaver bag and seal into UMAi Dry and continue drying.
