45 days in a UMAi Bag is the sweet spot for me. 21 and 28 just isn’t worth the effort IMHO. The Ruth Chris time dealt with commercial aging in large scale controlled rooms where they can carefully monitor and adjust conditions. The beauty of using the UMAi Bag at home is what I call “co-habitating” with your aging effort in SWMBO’s kitchen refrigerator! Ron
