If you are familiar with vacuum packaging, you know that FoodSaver bags are designed to preserve food by containing moisture and preventing oxygen contact with food that has been packaged in this laminated barrier material.
UMAi Dry, in contrast, is a single layer material which allows for the release of moisture and exchange of oxygen, thereby allowing dry aging and dry curing to be possible in a protected environment. UMAi Dry is very different from vacuum bags, it is not a vacuum bag, it is a membrane.
