If you read the blog section UMAI tells you they want you to open your fridge. Maintain a temp of 34-40 degrees. I have had my salumi in my everyday fridge for almost five weeks now and the temp has varied from 34-37 degrees with several openings a day..I have a digital thermometer probe and a regular dial fridge probe on the sausage rack with the meat. Everything is going very well. The salumi is getting very solid. There are no off odors or mold. The Umai drybag has shrunken tight to the meat and looks fabulous. I cant wait to dig in!! bout 7 more days to go.
