First time dry aging, bag not tight

Hi Cozzer,

It turned out great. Just do your best to not move the meat around too much. Towards the last week I moved the meat around to inspect and I think I made a whole in the bag somewhere. The end closest to the seal became kind of soft, but I trimmed that off and it was fine.
