That earthy beefy smell

You are fine! Everyone seems to agree on one of a few things it smells like to them. The earthy smell like soil after a rain, a nutty smell, or to some a moist musty smell. Thing is if the meat had actually spoiled say like if your refrigerator had quit running then a rotten, spoiled smell would knock you over! Sounds to me like you are doing just fine so you can relax!
