My guess is the meat was either bad to start with or some time doing the aging your refrigerator may have had a problem and the meat actually spoiled. When you say you trimmed it was there any bad smell? Normally your nose would have been a tip off to spoilage. Ron
I thought the smell was the one everyone spoke of when dry aeging. I know it was ok at the start but I will look into the fridge. The smell wasn’t that bad but not pleasant. Thanks for replying
