Sure you can, but I really am just asking why and what size meat you are wanting to dry age. The larger the piece of sub-primal then the less trimming loss! Now, if you have acquired the awesome taste of totally untrimmed aged beef it makes no difference. However until you do OR get your spouse or children to not go bananas over the outward appearance of dry aged beef and trim it back to “grocery store red” as I call it then why use two smaller pieces?
