Thanks for the reply and great question.
I honestly ask because I am toying with trying a variety of different meats. I have the dry steak sampler pack but rather than have to buy a bunch of different packs to try a bunch of different meats, I thought I could make some custom bags. Based on that I can then figure out what packs to buy in the future based on what meat worked well and I want to do again.
If my 11.25 lb NY Strip turns out as I hope (11 days in to a 45 day dry age), I will definitely be doing larger cuts again.
