Ed – freezing and then thawing for dry aging will be fine. Many of us start with sub-primals which have already been frozen. Now here’s a twist you might consider…just leave the meat unfrozen and still sealed in the cryovac in your refrigerator until you get home and then dry age it. During the time away in the cryovac that is known as wet aging and it is fine as long as your fefrigerator is operating properly. Ron
