Two thoughts – I assume this is your first time dry aging and are not familiar with the smell – most people refer it as a “nutty” or “earthy” smell. Is your garage refrigerator in good operating order and maintaining an acceptable refrigeration and circulating the air? Hopefully it is not one of those small “dorm size” units. The dorm ones cool, but do not circulate the air in the cooling process which is critical to dry aging. Ron
