I think you might be too concerned about the trimming of the fat cap. Granted some fat is desirable but I doubt they have been trimmed so closely that you need to be concerned – after all the fat means weight and the more the meat weighs the better their profit. Why not talk with the manager go the meat dept at HEB to see what he might be able to find for you. Also rather than to keep waiting to find an untrimmed roast, why not buy one and age it. As for the comment about already aging the meat – yes they all do, BUT unless they are marking it as dry aged and charging more then I won’t worry about it. Give one a try! Ron
