I need to talk to whoever runs the meat department at my Costco. They never have prime grade subprimals, and rarely have any sort of prime grade meat except for ternderloin (which they have in prime grade frequently). But I’m not a big fan of tenderloin, and I think the losses from dry aging would be too great.
$10.65 per pound is very good for prime grade. My last prime grade ribeye subprimal was $11.99 a pound. My final cost, after weight loss due to aging and trimming, was $15.95 a pound. But boy is it good steak.
