So I ran by my local Costco to pickup some supplies for Thanksgiving and saw the above lovely sitting in the meat case.
I must say that the bagging experience was MUCH easier this time around. I used the “raft” method rather than the paperclip I used on my first sealing attempt and it was much easier to work with. I also used one of the jumbo bags rather than the subprimal bag as I did with the strip. The extra bag really made the vacuum/sealing much more enjoyable.
Anyway, my lovely wife asked me a couple days ago how much longer I was going to need the fridge space I was taking up and after I told her the rest of the month, she gave me the thumbs up on buying another fridge. I didn’t really have the room for a full size monster since it has to fit in a utility room that already has a full size freezer and a washer/dryer. After doing a little research I found a 4.4 ft3 Danby Minifridge that is all fridge and has about 18″ wide shelves inside. I also grabbed a Ranco controller and little fan to move the air in the fridge. So far everything fits and the Fridge is holding 36F pretty easily.

Now all I can do is sit around and wait…great.

MemberAll’s well that ends well! Wish I could buy prime! That $10.65 per pound price was a good deal. Around here in the butcher shops rib eye runs $10.99 a pound and that’s only choice at that!

MemberThe choice was 8.99/lb which I would have been happy enough with, but the marbling on this one was really nice and that’s what sold me. I was lucky and had 8 subprimals to choose from and that was just in the prime bin. I really love our Costco, to a fault…lol!

GuestI need to talk to whoever runs the meat department at my Costco. They never have prime grade subprimals, and rarely have any sort of prime grade meat except for ternderloin (which they have in prime grade frequently). But I’m not a big fan of tenderloin, and I think the losses from dry aging would be too great.
$10.65 per pound is very good for prime grade. My last prime grade ribeye subprimal was $11.99 a pound. My final cost, after weight loss due to aging and trimming, was $15.95 a pound. But boy is it good steak.

I have read elsewhere that not all Costco’s carry prime as it’s a matter of the marketplace, so your manager probably is not to blame nor can he do anything about it.

MemberMy “local” Costco has a fair number of ritzy neighborhoods around it and when I say “local” I mean I drive a good 40 minutes to get to it. Anyway, I always seem to have a pretty good selection of Choice and Prime cuts and subprimals to choose from. To this point, I’ve never seen the counter bare.
