very excited i just picked up a 20 pound USDA Choice bone in ribeye for 6.99 a pound how long should i let this one go i am thinking 60 days ? any thoughts my first was a costco ribeye aged for 28 days my second was another ribeye aged 35 days but was not as nice of a cut the 28 day costco one was better
Blair – at 20 pounds and bone in you will need to take precautions so the bone doesn’t puncture the UMAi bag from the get go, or any time you handle it. If it were me I’d probably cut that sucker in half and dry age it in two separate bags. With the bone in then the aging on the bone side is greatly slowed down to a creep.on one side. Again if it were me I’d age those two bone in pieces no less than 45 days.
