Hello everyone. I am new to dry aging. I started with a NY strip loin and a Filet tenderloin. The NY is doing amazing but the filet seal broke 7 days into it. I don’t have a Umai back up bags, So I sealed it in a normal vacuum bag and ordered a Umai. My question is can I transfer it back to the Umai after 5 days in a Vacuum bag?
Yes – it will continue – and in fact during that time in the FS outer bag it is “wet aging”. The release of the moisture via the UMAi Dry® is concentrating the beef taste aka dry aging. You should be fine. BTW in total how long do you plan to age that piece?
