MemberI am going to dry age a subprimal boneless ribeye loin tomorrow for the first time. I have read a lot of about it. Are there any first time tips? I plan on sealing at an angle, putting the piece of cloth in, and sealing from there. I plan on aging for 45 days. Are there any suggestions for the first time?

MemberBurton, welcome aboard! What you described was sounding correct up until the “cloth” comment. Not sure where you got that idea and it certainly is NOT what you want to do. Just drain any excess moisture from the cryovac and slip the meat into the UMAi Dry® bag and seal it. You might want to watch one of the how to videos on this forum. Just go to Home up at the top. Please remember for a newbie leave the bag full size and starting doing the sealing. If for some reason you have a problem you still have room to cut off that part and try again. My first time I sealed my first bay 6 times before I got the hang of it! Good luck as ask here if you need help. I hang out here “all the time”. Ron

MemberWhen I watched the video they put something in between the two pieces of plastic when they sealed it. What was that? If not, do I simply seal it like I would if I were freezing it?

MemberThat white strip was the VacMouse® which allows a vacuum sealer such as a Food Saver to be able to extract the air from the bag before it seals it. It is a special piece of plastic – not cloth. Which UMAi Dry® kit did you buy?

MemberIn your packet then you should have found 3 bags and 5 VacMouse® strips. They are 6″ x 2″ and look like a piece of gauze. Please check your packet again.

MemberPull one of the 5 strips out and use it to complete the seal as you said you saw in the video. Good luck and let us know how it went. We love pictures! Ron
