MemberThat does look amazing. Where can a person pick up the meat glue (TG). Anywhere online it can be ordered?

MemberHaha speaking of Lloyd’s Flankstrami…Here is a video that Greg from Ballistic BBQ made recently that has gotten lots of attention. I think you can order Transglutaminase on Amazon. It is pretty amazing technology. Greg called his video Frankensteak 🙂 https://youtu.be/OrEqMeWIVcA

MemberGenerally speaking he could be right about the deception but he is wrong about everything else. I have created masterpieces with TG.

MemberHi Lloyd,
I suspect that neither McRib sandwich nor Arby’s roast beef use TG. It is used in cook to order product mostly cause it works at fridge temps. Products sold already cooked can just use good old emulsion as glue. You can sculpt some really fantastic dishes with it. I think his video raised lots of interest in TG.

MemberThe Frankensteak video was interesting, but really doesn’t bother me. I don’t go hunting for a steak dinner at 7-11 so I’m not too worried about it being formed meat. I would be shocked if any reputable steak house would use this product to deceive. If they can find a use for it in making interesting appetizers etc…I’m all for it. It was neat to see this particular application just as an example of the possibilities of this product.
I think I will be picking some up and trying some stuff out with it. Looks like it could make some amazing looking product.
Could different kinds of meat be glued together with this. Eg: beef to pork or beef/pork chicken for example…. -
