You have a real treasure there. I have had good results making venison salami, pepperoni as well as sujuk using venison instead of beef, and elk has a better flavor. You can use elk in any of the recipes that call for beef. Ron gave me some encouragement on using the venison and he was right.
I am presently experimenting with rabbit.
