MemberI have to agree with the original Poster although I would go even smaller. My family loves the small diameter salami’s. Some now them as Hunters Salami, or Pocket Salami. Casings usually start at 1 3/4″ to 2″. I just purchased the pre-made salumi bags but would love to see them smaller.

MemberI just like having options. I had to re check my supplies. I have a lot of bags and kits over a dozen. The finished product after drying is 2 inches. I belive ou advertise them that way too. I just checked my kits and I have 2 sausage kits and yes they are 3 inches but yield a sausage that is 2 inches. So in reality I want BIGGER so the dried sausage diameter is larger.
That being said having several options would be nice.
If a 3 produces a 2. How about a 4 inch. And smaller sizes like the poster asked for would be great.

MemberGot it. We probably had a misunderstanding about width of the bag vs diameter when stuffed 3 inch width = 2 inches diameter. So looks like you are looking to go to 2.5 inches in diameter, which will make it almost 4 inches wide. As Flatline mentioned the cacciatore salami is about 1 1/2 inch diameter so it has to be just under 2.5 inches wide.

I just want to see your slicer in action in action out of curiosity. I think I’m going to buy the Costco, German-made chef’s choice slicer featured by UMAi.
Please, please don’t hurry your lamb prosciutto for my sake, but definitely let us know how it turns out. It’s on my salumi bucket list.

MemberI would like more sizes available. I personally have no need for slim Jim size but many people might. I would like to make larger diameter salami’s. That would be great.
