I have a dedicated modern fridge freezer (frostfree) for my dry aging (which I have only just started to do) and wondered if putting a small USB fan inside to circulate air around the meat would be a good idea? Or would it just dry the meat out too fast and to just let the natural circulation from the fridge do its thing?
As long as your new frost free refrigerator is in proper working order there is no reason to add a fan. As the refrigerator operates it will circulate the air just fine as it draws off the moisture released from your aging meat.
Well…I had just “assumed” and we all know what that meant..when I answered your earlier question. When I convert your MM to inches then i now realize you have a tiny 2′ x 2′ x 3′ refrigerator. We call that a “dormitory” size refrigerator. Unless you have a super engineered make and model then all that unit will do is turn the contents “cold”. It will NOT draw off the moisture being released by the meat which IS CRITICAL!!!
Hi Ron, its not quite a dormitory sized fridge. It is a 315L Fridge Freezer & the Fridge part is 231 Litres. Its a standard sized home FF. It is not a small fridge that a student would have in their room or a beer fridge.
I asked the question RE the usb fan only as an added feature which may make the process of drying better. I will post a photo so you can see what I am up to 🙂
That should be fine as i’m sure it has an internal fan which cycles the air to make it frost free! Ron
