MemberI purchased the dry sausage kit & the chorizo & salami spice blend. On the website, it says
“This blend does not contain: Salt, Instacure #2, Starter Culture or the added Powdered Dextrose for creating a robust culture all of which are necessary for making traditional fermented slow dried sausage.
When I got the blend, on the bag is says it only doesn’t contain salt, instacure & starter culture, and it had dextrose in the ingredients.
Do i use the spice blend as is or do I need to add the “added powdered dextrose” to this, and if so, how much?

MemberI have the same question. Do I add more dextrose or is there a sufficient mount in the spice blend already?

We offer you the dextrose packet to ensure the starter culture has plenty of “food” to encourage robust, rapid fermentation and pH drop.
While the spice blends do all contain dextrose, it does not hurt to add the dextrose that is provided with your kit to further encourage fermentation.
The dextrose will not significantly change the flavor profile for human taste, as dextrose does not have the sweetness of sucrose or glucose.
